Feeding the Fun: The Art of Catering & Concessions Done Right
One of the most important areas of review is Catering and Concessions. No one wants to wait in line for a drink or food for so long they miss part of the event. And when lines get too backed up, it interferes with the flow of foot traffic in the area.
Are concessions kiosks properly stocked or do they run out of items quickly? Do your patrons enjoy the food and drink selections that are provided? What we focus on is learning what is working for you now, and then determining where can we improve upon it.
We begin to understand your specific catering and concessions situation by reviewing the following:
Concessions footprint to ensure efficient delivery and restocking of key units
Queuing and staging of concession customers to increase efficiency and ensure safety
Alcohol policies
Our concert promotion and advertising office has worked with David Elliott and Tim Reese since 1992 to collectively produce large-venue concerts for national artists at the University of Tennessee including both Thompson-Boling Arena and Neyland Stadium. Concerts that our office has worked with Elliott – Reese include artists such as Garth Brooks [arena and stadium], George Strait, Alan Jackson, Toby Keith, Luke Bryan and Miranda Lambert. The Elliott-Reese team has always been professional to deal with, prompt in completing “action items”, responsive, accommodating and hands-on to solve any production, ticketing and on-site issues. Their concert planning, preparation and specific attention to detail has been first class. I recommend and heartily endorse the Elliott – Reese “team” for venue and facility consultation, evaluation and selection, along with operational advice.
